Brass utensils, milk, copper

Boiling milk in brass utensils increases the copper content of milk. The amount of copper increased as the length of time the milk was stored in the container increased. Storing boiled milk in steel and/or aluminum containers also increased the copper level. (Indian Pediatrics 22:343-344, May 1985) It is felt that these elevated copper intakes may be responsible for the high incidence of cirrhosis being seen in Indian children.
